    Title: 廚餘再利用應用於有機種植─子計畫二:廚餘有機肥、大豆有機肥及化學肥栽種蔬菜之營養素差異探討

    Abstract: 本研究利用廚餘有機肥、大豆有機肥及化學肥,在MOA認證之有機農場溫室進行小白菜與青江菜之種植,再定期測量菜苗之生長情形並進行收成後之各種成分分析。在生長高度、葉長及葉寬測定,施以大豆有機肥組生長情形最佳;於粗蛋白分析,施以化學肥之栽種組分析含量(1.59~1.89%)高於有機肥組(0.76%~1.08%);於粗纖維分析,施以有機肥組分析含量(1.37%~1.89%)較化學肥組高(1.15%~1.21%);至於水分、粗脂肪及灰分含量,各種施肥栽種之差異不大。另外,小白菜及青江菜之維生素A、維生素C施予有機肥組均高於化學肥組,其中以大豆有機肥組最高(維生素A含量為135.10 RE、311.85 RE;維生素C含量為30.10 mg/100g、43.19 mg/100g)。微量元素Ca、Mg含量測定,小白菜在施予不同肥料之間的差異不大;青江菜則有機肥組高於化學肥組。綜上所述,本研究施以大豆及廚餘有機肥進行有機栽種,其維生素A、C及微量元素Ca、Mg之含量較化學肥之栽種含量高。
