    Title: 廉價藥用酵素之開發與研究(一)甘藷澱粉酶(Amylase)之比較研究

    Abstract: 本試驗曾收集30種以上不同品種的甘藷塊根(Sweet potato root)(包括本地和外國引進者以及已推廣和試驗中之品種),就肉、皮色,抽出液量及所含β-amylase之活性比較之。另部份比較去皮與否,塊根大小,不同栽培地區與收穫期及室溫貯藏對β-amylase收量之影響。最後,就粗酵素液之蛋白質分佈花樣(protein pattern)討論之。試驗結果計分六點如下:
    (1)就所試品種中,產量多而β-amylase含量最高的為臺農57號,每100克新鮮塊根約含30,000~45,00020單位的β-amylase。而一般品種的塊根約含10,000~25,000個單位而已。
    (2)栽培地區與收穫期明顯地影響塊根之B-amylase含量。
    (3)塊根去皮與否,B-amylase之收量沒有明顯的變化。
    (4)同一地區,相同品種而大小不同之新鮮甘藷塊根間,B-amylase之含量比率大約相等。
    (5)甘藷塊根在室溫處藏時 ,amylase活性急速增加,這可能與塊根的發芽有關。
    (6)由甘藷塊根抽取之粗酵素液,品種間之蛋白質花樣似無不同,但澱粉?蛋白質(amylase protein )與非澱粉?蛋白質(non-amylase protein)之比值相差甚多。
