    Title: 茶籽組成、茶油特性及茶籽成熟度與油含量之關係

    Abstract: 供選種用之大果種油茶樹(Camellia oleifera Abel)32株所採得之茶籽,各測定其種仁所佔百分率及種仁中油含量、粗蛋白、灰分等組成,以及各樣品抽出之茶油碘價、酸價、折射率及脂肪酸百分組成(GLC法,面積百分率)。結果顯示,油含量(Y)與茶籽之成熟度-以種仁百分率(X)表示――有密切正相關,其迴歸方程式為Y= 0.6908X- 0.8667,而r = 0.86。32件種子樣品各項百分率平均值分別為:種仁67. 2(佔全籽),種仁含水量8. 8,油45. 6(乾基),粗蛋白6.3(乾基),及灰分2.7%(乾基)。從此32件種子抽出之茶油一般特性平均值為:酸價1. 4,碘價88,折射率1.4699,脂肪酸百分組成為:(14:0)0. 2;(16:0)9. 6;(18:0)1. 9;(18:1)71. 4;(18:2)12. 3;(16:1)或(18:3)痕跡量,以及未確認之脂肪酸4.6%。茶油性質與橄欖油相似。
