    Abstract: 以黃豆油為原料,在鎳觸媒及適當條件下進行氫化反應,以增進油的安定性,並改變其物理性質,供製造人造奶油及酥油的基質。氫化過程中油碘價(I V)的下降與折射率相平行,利用此關係可快速決定所要的氫化終止點。用0.1%鎳作較高選擇性的氫化到油的碘價為103左右或86時,可分別作為油炸用油或油炸用脂。用0.05%鎳作較低選擇性氫化到碘價為89及75時,可將兩者互相調配而成一般酥油基質。20至30%的氫化黃豆油硬脂(I V= 6)或65%左右的氫化黃豆油(I V= 78)可分別與液體黃豆油配合再經交互酯化(interesterification)而成軟式人造奶油基質,而前一種產品含有約40%的亞麻油酸(linoleate)及約2%反型異構物(Trans isomers)。
