    Title: 優格乳酸菌粉之製備及生產

    Abstract: 乳酸菌因其益生(probiotics)特性,且應用廣泛,早已是食品界的研究主題,加上保健食品在國內日益受到重視,因而更加引發大眾對乳酸菌的興趣。隨著大對健康的意識抬頭,越來越多的人在家自製乳酸菌相關飲品,要自製高品質的優格,選擇好菌種或稱優格菌粉是最關鍵的因素。本系微生物團隊多年收集很多乳酸菌種,瞭解乳酸菌對人類健康的功能。因此,擬將一些對人體有益之乳酸菌製成菌粉,一方面可直接食用,另一方面亦可作成菌粉包,作為優格的發酵菌種。
