    Abstract: 一種活性豆漿粉末製作方法,尤指一種將豆漿製成未變性之豆漿粉末作為結著劑用途之製作方法,其係以未加熱變性之生豆漿經低溫低濕噴霧造粒設備進行粉末化,即可獲得未變性之活性豆漿粉末,具可取代蛋白粉或乳清粉作為重組素肉製程中所需之結著劑,及可長期儲存,該活性豆漿粉末為一全素結著劑,以解決目前素食業者最迫切急需之全素問題,極具商業價值與造福素食者。
