    Abstract: 一種活性豆腐腦製作方法,尤指一種備製未變性之豆腐腦作結著劑用途之製作方法,係以生豆漿經低溫加熱時,添加適量之凝固劑靜置沉澱後成一沉澱物,沉澱物再經壓置或離心,即可獲得未變性濕狀沉澱物之活性豆腐腦,具可取代蛋白粉或乳清粉作為重組素肉製程中所需之結著劑。本發明之製程簡易迅速及設備費用低,得以提供素食業者自行備製,大大的節省成本。此外,由本發明備製之活性豆腐腦為一全素結著劑,可解決目前素食業者最迫切急需之全素素肉產製問題,極具商業價值及造福素食消費者。
