Pilot plant scale hydrogenation of soybean oil was conducted to prepare various hydrogenated soybean oil for shortening and margarine preparation by reacting in a recycling type of pilot scale hydrogenator (Buss AG. Basel, Switzerland), using a nickel catalyst (Harshaw Nysel DM-3). A hydrogenated soybean oil of iodine value 112 was winterized at 4℃ and recovered about 75% olein which could be used as high stability salad oil. Hydrogenated soybean oils of iodine value 106 and 89, either of which was a blend of two hydrogenated soybean oils of different iodine values, could be used as frying oil and shortening. A blend of 50% hydrogenated soybean oil(IV=67)and 50% unhydrogenated soybean oil was used as soft type margarine oil base, which was made into a tub margarine of good spreadability and favorable flavor. This vegetable soft margarine contained about 31% of linoleic acid (18:2).
