    摘要: 分析木瓜籽、釋迦籽、蕃茄籽、葡萄籽、芒果籽等種子的油份含量、蛋白質含量、水份含量,及油脂一般化學特性之測定,並以氣相層析法與高效液相層析法分析油脂的肪酸組成。分析結果:蕃茄籽油含量為31% ,比較有利用價值的油源,其次為釋迦籽油含量為24.1%,木瓜籽油含量為27.8% ,葡萄籽油含量為14.3%。芒果籽油含量為6. 2%,顯著的偏低,而其脂肪酸的組成又以油酸含量53.4%,硬脂酸含量為29.8%,利用價值較低。木瓜籽油酸含量69.5%,釋迦籽油酸含量41.8%。,蕃迦籽亞麻仁油酸含量為51.3%,葡萄籽亞麻仁油酸含量34.2%,此為人體的必需脂肪酸。
