Abstract:	分析木瓜籽、釋迦籽、蕃茄籽、葡萄籽、芒果籽等種子的油份含量、蛋白質含量、水份含量，及油脂一般化學特性之測定，並以氣相層析法與高效液相層析法分析油脂的肪酸組成。分析結果:蕃茄籽油含量為31% ，比較有利用價值的油源，其次為釋迦籽油含量為24.1%，木瓜籽油含量為27.8% ，葡萄籽油含量為14.3%。芒果籽油含量為6. 2%，顯著的偏低，而其脂肪酸的組成又以油酸含量53.4%，硬脂酸含量為29.8%，利用價值較低。木瓜籽油酸含量69.5%，釋迦籽油酸含量41.8%。，蕃迦籽亞麻仁油酸含量為51.3%，葡萄籽亞麻仁油酸含量34.2%，此為人體的必需脂肪酸。
