    Abstract: 本試驗以烏梅(Prunus mume Sieb.et Zucc)之乙醇萃取液(ethanolic extracts of ume;EEU)作為樣品,測驗其對多種細菌生長之抑製作用。以11株不同菌株(Proteus vulgaris,Yersinia enterocolitica,Staphylococcus aureus,Shigella,Salmonella,Acinetobacter calcoaceticus,Lactobacillus amylovorus,Bacillus sutilis,Citrobacter freundii,Escherichia coli,Enterobacter clocae)為檢驗對象,結果顯示EEU具有抑菌作用,且隨著EEU添加量的增加抑菌效果愈顯著。
