    Abstract: 本研究係將中國傳統特有中藥調配數種養生藥材,依最佳配方比例添加於數種烘焙產品,經反覆試驗精心改良,而研發數種不僅口味獨特,且有助於養生健體之藥膳糕點。如:元氣餅,於配方中添加部份的中藥粉,使其成品之外觀呈現黃褐色,口感上則保有餅乾鬆酥之特質,此外更帶有人參獨特之氣味;烏髮蜜糕,以中國傳統糕點形式呈現,使其口感綿密而細緻,融入何首烏,其產品呈現灰黑色,用以搭配茶飲更顯相得益彰,與其烏髮效用相互輝映;烏髮蜜餅,產品中所添加之芝麻香氣,使產品更具不同風味,而其鬆脆口感與芝麻香於舌尖跳躍,香氣瀰漫。綜合此專題研究新研發之藥膳糕點,除可改進消費者對傳統糕點之觀念外,並可借由適當養生藥材之添加,將可提昇此消費者對此新研發藥膳高點之接受度,並可促進養生健體,提高免疫力,足以為業界開發之新型產品種類。
