    Title: 果糖轉移酵素特性研究

    Abstract: 本計畫的目的是建立以HPLC及TLC之快速分析技術，來分析果糖轉移酵素的活性與功能。實驗的結果顯示：由TLC的方法，可以檢定反應液是否含有三糖或是四糖，可快速確認具有酵素活性的部份或是成功的轉殖株；由HPLC的方法，可以定出反應液中葡萄糖、蔗糖、蔗果三糖、蔗果四糖的含量，使我們可以據此來分析反應速率。本計畫已完成方法的建立。
