    Abstract: 粥是我國傳統食品的一種,可以當早餐,下午點心或甜點等來食用, 黑米加入綠豆,可達到胺基酸互補功能,使得蛋白質品質更完全,增加營養價值與適口性。另外,添加金銀花及蓮子等經常應用於美味料理及食療性藥膳之製作,具有養生保健之功效,一般使含兩種或以上之藥材會比單一種藥材之藥效更為顯著。現在並沒有具有免疫調節保健功效的養生甜粥罐頭上市,因此有其市場性及潛力,一打開就可以立即食用,非常適合各個年齡層的人食用,可以預防發炎及感染性疾病發生。申請人查閱國內外有關之文獻及發明專利申請,均無黑米加入綠豆、金銀花及蓮子組合應用於養生甜粥的開發與其對體內及體外免疫調節保健功效之評估,因此值得進行研究。
