    Title: 廚餘減量作為之初探 --- 以南部科學工業園區之團膳業者為例
    A Study on Food Waste Reduction of Catering Companies In Southern Taiwan Science Park
    本研究主要目地是在探討廚餘問題以及如何廚餘減量,選擇團膳作為研究領域,並以南部科學工業園區廠商作為區域性的研究對象。除了「廚餘減量」推廣之外,也進一步探討其它相關環境友善措施議題、可行方法或措施以及其成效。本研究方法則是透過實地觀察法和深度訪談法探得研究結果。首先針對三家外包團膳業者進行實地現場觀察並一一記錄,以了解實際作業程序和狀況;接下來即是選定前述三家團膳業者代表進行一對一深度訪問,以期能更深入了解其作業管理方式與狀況。最後,再將上述二種方式所得到的內容作一統整,以獲得最後的研究結論。本研究結果發現,惜食是唯一最好解決廚餘的方法;而惜食則是要靠消費者自我要求,團膳業者內部管理階層決策與執行力的明確,以及其內部作業人員的努力。源頭減量的惜食,就能減少廚餘產生的可能性,也會間接減少一些相關環境問題的產生。空污、廢水、廢油、環境髒污及垃圾等的問題,仍需透過團膳和業主公司所有人員一起共同努力及改善。
    The main purpose of this study was to explore the problem of food wasteand find proper solutions. The cases studies were three catering companiesserving manufactories located in Southern Taiwan Science Park. In addition,some environmental issues related to catering companies were discussed. In themeantime, the solutions to the environmental issues mentioned above were alsosuggesyed.This study was based on the quqlitative methodology. Both fieldobservation method and in-depth interview method were applied to collectrelated useful data. The results of this study were obtained throughtout theappropriate analysis. First of all, field observation was conducted at theoperation sites of three catering companies. All necessary observations werecarefully recorded to understand the daily operation of these catering companies.Subsequently, the interview outline was appropriately accomplished to carry outthe in-depth interview of three catering companies. Finally, the data obtainedwere scrutinized and analyzed to establish the results of this study.The results of this study indicated that foodwise was the only best solutionto food waste. Foodwise relied on not only the clear decision-making andexecution capabilities of the catering company's internal management but alsothe self-requirements of consumers. During the promotion of foodwise of threecatering companies, it was also found that some related environmental problemswere also improved.
