    標題: 台南地區女性美容人員的營養知識、飲食態度與行為相關性研究
    Study on the Nutrition Knowledge, Dietary Attitudes and Behaviors of the Women Beauty Practitioners in Tainan District

    摘要: 根據行政院主計處全國普查統計,美容從業人員從民國90年的51,794人至105年增加到75,320人,成長45 %;其中又以女性為主(占82.6%)。因此,本研究乃針對台南地區的女性美容人員,採橫斷面問卷調查方式,探討其對於營養的認知、飲食態度以及飲食行為之相關性。問卷衡量構面使用題項,係依據衛生福利部國民健康署《 每日飲食指南 》設計而成,並利用SPSS 12.0 進行次數分配、百分比、平均數等分析,以瞭解本研究樣本結構組成情形;其次以獨立樣本t檢定、單因子變異數分析(ANOVA),比較受訪者不同背景各變項之營養知識、飲食態度及飲食行為是否具有差異;最後,再進行皮爾森積差相關分析,探討營養知識、飲食態度與行為之間的相關性。結果顯示:美容人員普遍具有適度的營養知識(答對率76.2 %);惟『油脂成分與功能』方面認知稍嫌不足;而在食物選擇方面仍以白飯和肉類為主。且六大類食物除肉類外,其餘均未達到《 每日飲食指南 》之建議攝取量。結論:本研究顯示美容人員的營養知識、飲食態度與行為相互呈現顯著性正相關。
    According to the statistics of nationwide census carried out by DGBAS (Directorate-General of Budget, Accounting and Statics, Executive Yuan in Taiwan) , the beauty workers increased from 51,794 in 2001 to 75,320 in 2016, with a growth rate of 45%. Most of them were women shared 82.6%. A cross-sectional questionnaire survey was conducted among women beauty practitioners in Tainan area to explore their relevance to nutrition, dietary attitudes and behaviors.
    Questionnaires were designed according to the Daily Dietary Guidelines of HPA (Health Promotion Administration. Ministry of Health and Welfare). SPSS 12.0 statistical software was used to analyze the number distribution, percentage and average of samples in order to understand the composition of sample structure in this study. The correlation of nutritional knowledge, attitude and dietary behavior among different background variables was measured by independent sample t-test, and one-way ANOVA. The Pearson correlation analysis was conducted to explore the relation of nutritional knowledge, dietary attitude and dietary behavior each other.
    The results showed that women beauty practitioners generally had moderate nutritional knowledge (76.2%) ; however, the awareness of "fat composition and function" was slightly insufficien. While in terms of food selection, it was mainly based on rice and meat. Except meat, the other six categories of food did not meet the recommended intake of the Daily Dietary Guidelines. This study shows that the nutritional knowledge, dietary attitudes, and behaviors of beauty practitioners are significantly positively correlated with each other. The results will be helpful for the government to promote the curriculum planning of "Nutrition Knowledge Transfer and Education Training" for beauty practitioners and help them to establish correct dietary concepts.
