    Title: 體位過重的女性使用香蕉花醋飲的營養狀況評估
    Nutritional status assessment in the usage of banana (Musa sapientum L.) flower vinegar drink by overweight woman

    Abstract: 香蕉花富含植化素並具有抗氧化活性,在民間被用來治療腎結石、潰瘍及調節血糖。本研究利用康普茶 (kombucha tea) 的發酵技術,製備香蕉花醋飲,並提供給體重過重的受試者飲用;招募體重過重的女性受試者15位,1位因故中斷活動,實際參與試驗為14位。試驗前集合受試者進行體位測量與生化檢驗評估,隨後每天定量使用8 mL的香蕉花醋飲濃縮液,並加水稀釋至30 mL後飲用,共為期28天,28天後再進行體位測量與生化檢驗評估,活動結束後以問卷方式評量此醋飲官能品評。以中位數差異檢定結果顯示受試者每天飲用香蕉花醋飲28天後顯著降低血中低密度膽固醇 (LDL-C)及提升肌肉量;此外,利用量子弱磁場共振分析儀檢測出受試者在心腦血管中膽固醇結晶與脂質代謝係數有顯著影響;受試者對產品整體官能品評介於尚可與喜歡之間。綜合所有營養狀況評估,體位過重女性使用香蕉花醋28天後,雖不能影響大部分營養狀況,但可以顯著改善血中LDL-C與影響心血管方面生理機能。
    Banana flowers have been reported to contain abundant phytochemicals and possess antioxidant activity, they are used to cure kidney stones, ulcers and to regulate blood sugar among the people. In this study, banana flower vinegar drink was prepared by using kombucha tea fermentation technology and provided for the overweight subjects. Fifteen overweight women subjects were recruited, but one dropped out for some reason, so fourteen participated in the experiment to completion. Prior to the experiment, the anthropometric measurement was conducted and the biochemical tests were evaluated for the subjects, who consumed daily 8 mL of the banana flower vinegar drink concentrate which was diluted to 30 mL for a total of 28 days. The anthropometric measurement was conducted and the biochemical tests were evaluated after 28 days. After the event, the questionnaire was used to evaluate the organoleptic evaluation of the vinegar drink. The results showed that decreasing the low-density lipoprotein cholesterol (LDL-C) and increasing muscle mass of the subjects consuming banana flower vinegar drink were significantly observed after 28 days used by Wilcoxon sign-rank test. There was a marked impact on the cholesterol crystal and lipid metabolic coefficient in the cardiovascular and cerebrovascular systems, tested by using quantum resonant magnetic analyzer. The subjects’ evaluation of the product’s overall organoleptic evaluation was between “fair” and “like.” In sum, the LDL-C in blood and the cardiovascular function could be improved by consuming banana flowers vinegar after 28 days from the overweight woman, though most of the nutritional status is not affected.
