    Title: 食品香料中黃樟素之測定研究

    Abstract: 黃樟素(Saforle)雖被列為第二級B 類致癌物,在我國為合法可依規定使用的食品添加物,且存在一些天然植物或香料中,因此本研究以微波儀器(MARS6)萃取食品香料及食用檳榔時作為添加物的荖花中成分,利用管柱色層分析(Column Chromatography)分離出其中的Safrole,藉由揮發特性及高分子薄膜的吸附性來探討不同的測定方法,利用高分子薄膜包覆Seiko 兩面金屬電極石英晶片,使Safrole 吸附於薄膜後,以操作簡單且快速的儀器探討樣品濃度相關線性,因此進行衰減全反射-傅立葉轉換紅外線光譜儀(Attenated Total Reflection-Fourier Transform Infrared Spectroscopy,ATR-FTIR)測定,換算樣品中Safrole 濃度,再以石英晶體微天平(Quartz Crystal Microbalance,QCM)測定振盪頻率,由於Safrole 吸附後整體重量改變,會引起振盪頻率的下降,藉由頻率差換算樣品中Safrole 濃度。
    再利用氣相層析火焰離子偵測器(Gas Chromatography-Flame Ionization Detector,GC-FID)測定市售精油所產生的揮發性芳香物,篩選適當的樣品並換算其中Safrole 濃度,比對衰減全反射-傅立葉轉換紅外線光譜儀(Attenated Total Reflection-Fourier Transform Infrared Spectroscopy,ATR-FTIR)測定的濃度來探討相關線性。
