    Title: 牡蠣剝殼廢水之回收利用與其功能性評估

    Abstract: 牡蠣 (oyster) 為台灣最重要的養殖經濟貝類之一。牡蠣的開殼取肉為食用加工利用上的第一步驟,在剝殼取肉作業中常會有廢水產生,此廢水主要含有蛋白質、胺基酸、核?酸及其他營養成份,大多被當成廢棄物,容易造成環境上的污染及資源的浪費。本研究以牡蠣剝殼廢水作為原料回收濃縮含氮量較高的回收物。並評估此等回收物是否具有相關的保健功效。在短期動物實驗中,餵食自發性高血壓大鼠 (spontaneously hypertension rat, SHR)不同劑量的牡蠣剝殼廢水回收物,能否具有降低血壓的效果。由此實驗發現在較低劑量下牡蠣剝殼廢水回收物即具有相當好的穩定血壓效果。顯示牡蠣剝?廢水中具有可開發抗高血壓的保健成份的潛力。
