    Abstract: 本計畫以分離自傳統醃漬蔬菜之植物源乳酸菌為對象,從11株經體外試驗證實具有免疫提升能力的植物源乳酸菌中,進一步篩選具有抑制食因性食品病原菌之乳酸菌株,針對其抑菌物質之特性進行探討,並對其增殖培養基組成及培養條件等進行了研究,最後委託國內廠商進行試量產,以探究其應用於人體保健與食品保存之可能性。
