摘要: | 香蕉花具有抗氧化能力,有降血糖、抑制糖基化終產物(AGE)、抗瘧疾、促進溶酶體酶及傷口癒合的能力。而康普茶在動物及細胞模式中具有保肝、降血糖、血脂及膽固醇功效、解毒、抗氧化、抗老化及增強免疫力。由於香蕉花及康普茶都具有抗氧化活性,因此推測香蕉花有助於保護肝臟,免於受到酒精性肝損傷。所以本實驗使用南化烏山Musa sapientum L. (台灣北蕉) 品種的香蕉花,經熱水萃取,再以酵母菌屬、醋桿菌屬和乳桿菌屬的共生菌膜完成香蕉花醋飲製備,並在大鼠飲食中添加香蕉花醋飲,進行保護酒精性肝損傷功效探討。
在動物實驗模式,將七週齡大鼠品系分成五組:正常組、酒精組、 Silymarin (100 mg / kg b.w. / 2 day)、低劑量香蕉花醋飲 (2 ml / kg b.w. / 2 day),及高劑量香蕉花醋飲 (6 ml / kg b.w. /2 day)。在第 90 天犧牲,觀察血清中肝功能及腎功能生化指標;肝臟中抗氧化物質、酵素與氧化傷害指標,TBARS含量;以及肝臟組織切片。結果顯示香蕉花醋飲降低酒精所誘發的肝相對重量增加,減緩肝腫大現象,肝組織切片由重度廣泛性脂肪肝減輕為極輕度脂肪肝,能降低酒精所引發肝臟中代謝酒精酵素細胞色素 P450 及氧化傷害指標 TBARS 上升,抗氧化物質 GSH 下降,也使血清中肝發炎指標 AST 下降。此外,也進行香蕉花醋飲之感官特性的接受程度問卷調查,結果顯示香蕉花醋飲在香氣、外觀及色澤接受度平均值都在尚可 (3.2-3.7),而口感及風味在接受度平均值為 2.9 分。 Banana flowers are good sources of antioxidants, which exhibit advanced glycation end product (AGE) inhibitory activity, anti-hyperglycemic activity, anti-malarial activity, and wound-healing potentials. In animal and cell models, the Kombucha is hepatoprotective, lowers blood glucose, reduces blood lipids and cholesterol levels, and has detoxification, anti-oxidation, anti-aging and enhance immunity effects. Since banana flowers and Kampuchea both have antioxidant activities; this study investigates whether banana (Musa sapientum L.) flower vinegar drinks protect liver from alcoholic liver injury. Banana flowers (Musa sapientum L.) used in this study were obtained in the area of Nanhua township in Taiwan and were extracted with water at high temperatures. The extract was fermented using Saccharomyces, Acetobacter and Lactobacillus acidophilus, and vinegar used to investigate the protective effects on chronically alcohol-induced liver injury. In animal models, seven-week-old rats were divided into five groups: the normal group, alcohol group, Silymarin (100 mg / kg b.w. / 2 day), low-dose banana flower vinegar (2 ml / kg b.w./ 2 day), high dose banana flower vinegar (6 ml / kg b.w. / 2 day). The experimental rats were sacrificed at 90th days. Serum biochemical indices of liver and kidney function; antioxidants, anti-oxidative enzymes and oxidative stress indicators, TBARS content in liver; and liver tissue sections were observed. Our results revealed that fermented vinegar (2-6 ml / kg weight /2 day) from banana flowers has beneficial effects in reducing relative weight of liver, fatty liver and alcohol metabolizing enzyme, cytochrome P450, activity, oxidative stress indicators, TBARS contents, antioxidant-GSH contents and liver inflammation index, AST induced by alcohol. Additionally, a survey showed that the acceptant rate for the odor, appearance, and color of banana flower vinegar is 3.2-3.7; taste and flavor was 2.9. |
