本研究主要改變兩步驟乳化中油相 (Caprylic/Capric Triglyceride、Isopropyl Myristate) 與水相、複配乳化劑(Brij72/Brij721、Tween 80/ Span 80)、不同高分子化合物 (Carbopol 940、Hydroxy ethyl cellulose) 之比例及均質速度,探討其對於W/O乳化及W/O/W多重乳化的流變性質、粒徑大小分布、Zeta電位、液滴外觀及穩定性的影響。實驗結果顯示,當複配乳化劑Tween 80/Span 80添加量為1%、Brij72/Brij72添加量為2%、Caprylic/Capric Triglycerid添加量為21%、Isopropyl Myristate添加量為20%、Carbopol 940添加量為0.2%、內油相與外水相比例為2:3、乳化均質轉速6000rpm時,有較高的LVE值與屈服值,粒徑分佈單分散性佳,平均粒徑(中位徑)為2.534?m,Zeta電位較高,經溫度老化試驗與離心試驗後無相分離現象,顯示其結構相對較穩定。 The purpose of the study was to investigate the effect on rheology, droplets size and distribution, Zeta potential, droplets appearance and stability of emul-sions (water-in-oil) and multiple emulsions (water-in-oil-in-water) by changing the concentration of the oil phase (Caprylic/Capric Triglyceride, Isopropyl Myristate), water phase, mixed surfactant systems (Brij72/Brij721,Tween 80/ Span 80), polymer and stirring speed in two-step emulsion.The results revealed that the relatively stable W/O/W emulsions were ob-tained,when using 1 wt% Tween 80/ Span 80, 2 wt% Brij72/Brij721, 21 wt% Caprylic/Capric Triglycerid, 20 wt% Isopropyl Myristate, 0.2 wt% Carbopol 940 and the ratio of inner phase(w/o type emulsions) to external phase (water phase) is 2:3, the stirring speed at 6000 rpm. The W/O/W emulsions has higher Zeta po-tential, LVE value and yield value,the droplets size is 2.534?m and distribution of droplets size shows unimodal distribution and no phase separation was observed after the temperature aging test and the centrifuge test.
