    標題: 消費者對食品標示的知識、態度與健康生活型態之相關研究-以臺南市民為例

    摘要: 許多研究肯定食品標示是最能幫助消費者改變飲食習慣和促進健康的有效方式。食品標示能提供足夠的資訊讓消費者作選擇,使消費者對產品有正確的認識,並能確保食品安全衛生以維持身體健康。本研究的主要目的在探討臺南市的消費者對食品標示的認知、態度與其健康生活型態之相關性。以自編之「食品標示知識量表」、「食品標示態度量表」及「健康生活型態量表」為研究工具,將臺南市的行政地理區劃分10區,依各區人口數的千分之二為收案研究人數,採便利抽樣方式,共發放373份問卷,回收有效問卷373份,利用描述性統計、獨立樣本T檢定、單因子變異數分析、皮爾遜相關分析、多元迴歸等統計方法進行結果分析。 研究結果顯示,不同個人背景變項對食品標示的知識、態度與健康生活型態是有顯著差異。年齡、平均月收入所得與職業在「食品標示知識總分」有顯著差異。性別、教育程度在「整體食品標示態度」有顯著差異。性別、年齡、教育程度、家中主要採購者、BMI、平均月收入所得與職業在「整體健康生活型態」有顯著差異。「整體健康生活型態」與「整體食品標示態度」與有顯著正相關;但卻與「食品標示知識總分」沒有顯著之關係;「食品標示知識總分」則與「整體食品標示態度」則有顯著正相關。家中主要食物採購者、食品標示知識取得來自學校上課、食品標示知識取得來自食品標示相關教育活動、平均月收入所得40,001元以上者、BMI≧24者與「整體食品標示態度」可以顯著預測「整體健康生活型態」。 研究結果可以作為政府推動規劃消費者食品安全教育及健康生活型態促進方案之參考,以增進消費者對食品標示的正確知識、觀?與態度,進而提升健康生活品質,同時亦能提供學術界研究之參考。
    Many studies have confirmed that food labelling is the most effective way to help change dietary habit and promote health. Food labeling can provide consumers for decision making. It also can improve consumers’s knowledge and increase food hygiene and safety for maintaining health. Purposes of this study are to exam consumers’s knowledge and attitudes towards food labeling as well as its relevance with living lifestyle in Tainan city. A questionnaire includes “Food labelling knowledge ”, “Food labelling attitude” and “Healthy lifestyle” was used for this study. A total of valid 373 survey questionnaires were collected. Data were analyzed by descriptive statistics, independent t-test, one way ANOVA, pearson correlation analysis and multiple regression analysis. Results of this study indicate that “Food labeling knowledge”, “Food labeling attitude”, and ”Healthy lifestye” have significant differences among demographic variables. “Food labeling knowledge” is affected by age, average monthly income and occupation. “Food labeling attitude” is affected by gender and education. ”Healthy lifestye” is affected by gender, age, education, major food purchasers of households, Body Mass Index(BMI), average monthly income and occupation. ”Healthy lifestye” has a significant correlation with “Food labeling attitude”, but has no significant correlation with “Food labeling knowledge”. “If sources of food labelling knowledge for major food purchasers of households come from lessons in school and food labelling related education activities, and average monthly income is over NTD40,001 and BMI≧24, then healthy life styles can obviously be predicted accordingly.”. Results can provide suggestions and references for governmental policy making to promote food safety education and improve healthy lifestyle quality.
