    摘要: 背景目的:近年來經濟蓬勃發展,加工食品及精緻食品充斥整個市場,衍生出許多因飲食過量與不均衡而造成的健康問題,尤其是近來食安事件頻傳,而食品標示是選購食品時最有效的工具之一,青春期學生的飲食習慣也會影響日後的生活型態,若能提早學會使用食品標示,對未來的健康也會有很大的助益。本研究之目的是在調查研究大學生對食品標示之知識,態度及其購買行為之相關性探討。研究方法:本研究採用問卷調查法,問卷內容包括基本資料,食品標示之知識量表、態度量表以及購買行為量表。問卷經專家效度與信度檢測後進行施測。共發放正式問卷820份,有效問卷780份,回收率為95%。資料收集後以描述性統計、獨立t檢定、單因子變異數分析,相關分析與線性迴歸分析等進行相關性之探討。分析結果:分析結果得知大學生在知識方面以標示有效日期答對率最高,態度方面則會注重食品標示對鈉攝取產生的健康問題與購買食品時會重視是否標示有效日期。購買行為方面則較重視食品的製造廠商,食品添加物的種類若太複雜也會影響購買的意願。食品標示知識在性別、學院別、年級別、平常吃零食習慣、是否修過營養學相關課程、家庭每月平均所得變項間有顯著的差異食品標示態度在學院別、平常吃零食習慣,是否修過營養學相關課程變項間有顯著的差異;購買行為在性別,學院別、是否修過營養學相關課程變項間有顯著的差異。食品標示知識、態度與購買行為間有顯著相關,但只有食品標示態度是購買行為的顯著預測因子。結論建議:知識、態度與購買行為雖有相關性,但只有態度才會顯著影響大學生的購賣行為,因此學校課程如能提供一套有效的營養教育計畫,除了提升大學生對食品標示的態度,同時改變大學生的購買行為,促進生活健康。
    Backgrounds: The purpose of this study is to investigate college students' knowledge, attitudes, purchasing behavior toward Food Labels and exploring the relationship among variables. Methods: The questionnaire included basic information, knowledge, attitude and purchasing behavior scales toward food label. Validity and reliability was tested by experts. A total of 820 questionnaires were distributed, 780 were returned, a returned rate was 95%. Descriptive statistics, independent t test, ANOVA, correlation and linear regression analysis were used after data collected.Results: Results show college students have the highest correct rate on food labels of the expiring date. Subjects focus on attitudes toward healthy problems caused by food label marked on sodium intake and the expiring date. For purchasing behaviors, there is more attention to food manufacturer and food additives. Knowledge toward food label has significant differences in different gender, colleges, grades, snack eating habits, those whether take related nutrition courses, and family monthly average income. Attitudes toward food label has significant differences in different colleges, snack eating habits, and those whether take related nutrition courses. Purchasing behavior toward food label has significant differences in different gender, colleges, and those whether take related nutrition courses. Knowledge, attitudes and purchasing behaviors are significantly correlated, but only attitudes can significantly predict purchasing behaviors.Conclusion: knowledge, attitudes and purchasing behavior were relevant, but only the attitudes can significantly influence the purchasing behavior of college students. We suggest that the school curriculum should provide an effective nutrition education program to upgrade attitudes of college students toward the food label, and change the purchasing behaviors of college students to promote their healthy living. .
