    Abstract: 世界人口不斷增加,量時缺乏之嚴重性也日甚一日。尤其是開發中國家對蛋白質的需求更為殷切。因此,如何提高蛋白質的產量,近年來已成為世界糧農組織(FAO)及各國專家研究的重要議題。蛋白質的來源可分動物性與植物性兩類。前者含必要氨基酸(essential amino acids)之比例高,品直較佳,但價格高昂,非開發中國家的平民所能完全負擔。後者包括植物的種子(如穀類和豆類)、藻類和微生物(如石油蛋白)等。雖質地略差,但生產潛力大,成本低廉,適合開發中國家人民的需求。
