    摘要: 臺灣天仙果學名為 Ficus formosana Maxim.,屬桑科(Moraceac)榕屬(Ficus genus)多年生常綠小灌木。由於根莖會散發奶香味,果實長像羊的乳頭,故有小本牛乳房、羊奶頭、羊乳埔等別名。由於天仙果的應用常被選用做為藥膳燉補的中草藥,因此本研究將針對臺灣天仙果根部分別加熱1 及 3 小時熱水萃取之物質,進行一般成分分析、抗氧化性質、抗氧化成分分析。由結果顯示,在一般成分分析中臺灣天仙果根部及 1 和 3 小時
    熱水萃取物的水分分別為 4.68%、6.72% 及 6.69% ;碳水化合物分別為43.35%、54.48% 及 54.56% ;粗灰分分別為 3.83%、9.71% 及 8.02% ;粗脂肪分別為 2.59%、0.59% 及 0.44% ;粗纖維分別為 28.76%、2.31% 及1.38%;粗蛋白分別為 20.20%、26.22% 及 8.83%。抗氧化性質部份,在總抗氧化力方面,臺灣天仙果根部及 1 和 3 小時熱水萃取物在20 mg/ml 時,相當於 3.75 及 3.43 mM Trolox 之抗氧化能力;還原力分析顯示,在濃度10mg/ml 時,熱水萃取物還原力分別為 0.90、0.93 ;清除DPPH自由基能力方面,在濃度 10mg/ml 時,清除能力分別為 45.73% 及 40.55% ;螯合亞鐵離子方面,在濃度10mg/ml 時,臺灣天仙果熱水萃取物分別有 95.43%及 92.19% 之螯合能力。抗氧化成分分析部分,臺灣天仙果根部 1 及 3 小時熱水萃取物之總多酚含量分別為 319.99 及305.97mg/g;總類黃酮含量分別為 15.63 及 14.73mg/g。綜合以上結果,臺灣天仙果根具有良好抗氧化能力,且推測富含於其中的總多酚類,扮演著重要的角色,期待研發臺灣天仙果之藥膳食療,作為養生保健之應用。
    Taiwan Ficus its scientific name is the Ficus formosana Maxim., belong
    Moraceac Ficus genus is perennial evergreen shrub. Because of Roots can
    distributed milk flavor. Fruit is like sheep's nipple, alias of small cattle breast
    goat head, goat milk Po. Due to the Ficus formosana often use as medicinal diet
    stewed supplements of Chinese herbal medicine. The aim of this study was to
    examine the possible general composition analysis, antioxidant properties and
    antioxidant component analysis of heated for one and three hours water extracts
    of Ficus formosana root from Taiwan. The result showed of general composition
    analysis of the root and one and three hours water extracts of Ficus formosana,the moisture conten for 4.68%, 6.72% and 6.69%, respectively. The
    carbohydrate conten 43.35%, 54.48% and 54.56%, respectively, the ash were
    3.83%, 9.71% and 8.02%, respectively, crude fat were 2.59%, 0.59% and 0.44%,
    respectively, crude protein were 20.20%, 26.22% and 8.83%, respectively, crude
    fiber were 28.76%, 2.31% and 1.38%, respectively. Antioxidant properties of
    one and three hours water extracts of Ficus formosana root, concentration in 20
    mg/ml when the antioxidant capacity of 3.75 and 3.43 mM Trolox; at 10 mg/ml,reducing power of 0.90 and 0.93, respectively; the concentration in 10 mg/ml,
    the DPPH radical scavenging effect of 45.73% and 40.55%, respectively;
    Chelating effect of 95.43% and 92.19%, respectively. Antioxidant component
    analysis of one and three hours water extracts of Ficus formosana root, total
    phenolic compound content of 319.99 and 305.97mg/g, respectively; total
    flavonoid compound content of 15.63 and 14.73mg/g, respectively.
    The above results, of root from Ficus formosana has good antioxidant
    capacity, expect developed herbal diet of Ficus formosana , as application of
    health care.
