本硏究是探討炸油對肝細胞pIgR (polymeric immunoglobulin receptor)、皮耶氏班和腸繫
膜淋巴結細胞細胞激素基因表現之影響。五週齡C57BL/6J 雌性小鼠飼以含7%和15%的新
鮮黃豆沙拉油或炸油之AIN-93G 飼料六週。除高炸油組小鼠終體重小於高新鮮油組小鼠
外,飼料中新鮮油和炸油含量對小鼠終體重沒有影響。不管飼料中油含量高低,炸油組小
鼠飼料攝取量均低於新鮮油組小鼠。高炸油組小鼠糞便中IgA 與高新鮮油組小鼠比較均顯
著減少,但血清IgA 濃度卻增加。炸油抑制負責運送血清雙聚體IgA 至腸腔之肝細胞pIgR
mRNA 的表現。而且炸油含量愈高,肝細胞pIgR mRNA 表現減少愈顯著。除了腸繫膜淋
巴結的IL-6 外,炸油不影響皮耶氏班和腸繫膜淋巴結細胞IL-2、IL-4、IL-6 和TNF-αmRNA
基準值的表現。實驗結果顯示,雖然炸油對皮耶氏班和腸繫膜淋巴結細胞細胞激素mRNA
基準值表現大致上沒有影響,但高炸油組小鼠糞便IgA 濃度減少和血清IgA 濃度增加可能
與肝pIgR mRNA 減少有關。 This study was to investigate the effect of deep frying soybean oil on the gene expression of
hepatic immunoglobulin receptor (pIgR), cytokine gene expression in Peyer’s patches (PP) and
mesenteric lymph nodes (MLN) in mice. Five-week-old female C57BL/6J mice were fed C (7%
fresh oil), CO (7% deep frying oil), HC (15% fresh oil) and HO (15% deep frying oil) diet for 6
weeks. The feed intake was decreased in mice fed with the deep frying oil regardless of the oil
level. The final body weight was decreased in HO group mice compared to the HC group mice.
The high serum IgA level in concomitant with low fecal IgA concentration was also found in HO
group mice. The hepatic pIgR, which is responsible for transport of blood dimeric IgA into the
gut lumen, was inhibited by the deep frying oil. The hepatic pIgR mRNA was significantly
reduced 40% and 58% in O and HO group mice, respectively. The deep frying oil exerted no
effect on the basal level of IL-2, IL-4, IL-6 and TNF-αmRNA in PP. However, the IL-6 mRNA
was significantly increased in MLN of HO group mice. These results suggested that the high
serum IgA and low fecal IgA concentration may contribute by the low gene expression of hepatic
pIgR in HO group mice.
