摘要: | 本研究以台灣地區中式餐廳廚房煙道廢氣進行總懸浮微粒、 PM10 、 PM2.5 及多環芳香烴化合物 ( PAHs ) 之採集及分析。 PAHs 煙道採樣系統採集十六種 PAHs 污染物以氣相層析質譜儀 ( GC/MS ) 進行分析,同時以 PM10 與 PM2.5 採樣器,攔截並收集廢氣中特定尺寸之粒狀污染物,藉以比較不同餐廳排放 PAHs 濃度及粒狀物之關係。
研究結果顯示,有十一家餐廳廚房煙道廢氣中之 PAHs 多以氣相為主,以質量分佈而言,氣相 PAHs 佔總 PAHs 達 94.7 % ,而粒狀物相之 PAHs 僅佔 7.30 % 。受檢測餐廳之總PAHs平均排放濃度範圍介於 47.4 ~ 513 µg/Nm3 之間,平均濃度為 192 µg/Nm3 ;其中具高致癌潛能之 BbF+BaP+DBA 平均排放濃度範圍介於 1.21 ~ 36.0 µg/Nm3 之間,平均濃度為 13.7 µg/Nm3 ; Total BaPeq 毒性當量平均排放濃度範圍介於 1.45 ~ 40.3 µgBaPeq/Nm3 之間,平均濃度為 16.1 µgBaPeq/Nm3 。不同餐飲特性中以快炒類餐飲之總 PAHs 、 BbF+BaP+DBA 及 Total BaPeq 毒性當量濃度在不同餐飲型態比較中為最高。同時,各餐廳之總 PAHs 平均排放係數範圍介於 41.4 ~ 8026 mg/L-油、 4.96 ~ 688 mg/人-餐及 7279 ~ 287504 mg/hr-爐台,平均係數分別為 3650 mg/L-油、 239 mg/人-餐及 118376 mg/hr-爐台,不同餐飲特性中之總 PAHs 排放係數以大型餐飲 ( 6275 mg/L-油及 429 mg/人-餐) 為最高,其次為快炒類餐飲 ( 3478 mg/L-油及 213 mg/人-餐) ,攤販式餐飲 ( 142 mg/L-油及 93 mg/人-餐) 為最低。
十六家餐廳廚房煙道廢氣中進行廢氣粒狀物分析,前、後兩者皆有處理設備其 PM10 及 PM2.5 比例較只有前處理設備或皆未有任何處理設備為低,再 PM10/TSP 及PM2.5/TSP 比較,當 PM10/TSP 濃度越高其 PM2.5/TSP 濃度呈相對關係。在油滴與非油滴比例上,當粒徑越小,油滴粒狀物的成分越低,表示油滴粒狀物存於大顆粒中。 Taiwan-Chinese Restaurants are sourcing of air pollution such as total suspended partical, PM10, PM2.5 and polycyclic aromatic hydrocarbon (PAHs). This case study the samples were collected with different restaurants and different source emissions, about 16 kinds of PAHs were collected by PAHs stack sampling and analyzed by gas chromatography mass spectrometer (GC/MS), about PM10 and PM2.5 were collected by PM10 and PM2.5 samplers which intercept and collect samples in specific size of particulate pollutants.
For the PAHs results shown 11 different restaurants which mainly of PAHs are in gas phases about 94.7% of total PAHs while PAHs are in granular phase about 7.3% of total PAHs. The total concentrations and average of PAHs are approximately 47.4 - 513 µg/Nm3 and 192 µg/Nm3 respectively; about BbF + BaP + DBA which cause of the carcinogenic potential are approximately 1.21 - 36.0 µg/Nm3, the average around 13.7 µg/Nm3. The toxic equivalency factors of total BaPeq concentrations and average are approximate 1.45 - 40.3 µgBaPeq/Nm3 and 16.1 µgBaPeq/Nm3 respectively. The highest concentrations of total PAHs, BbF + BaP + DBA and total BaPeq were in the cooking restaurant comparison with the catering restaurant. Meanwhile comparison with PAHs emission factor, from oil usage, one meal per person and stove are approximate 41.4 - 8026 mg/L, 4.96 - 688 mg/person and 7279 - 287504 mg/hr. About the PAHs average coefficient from oil usage, one meal per person and stove are approximate 3650 mg/L, 239 mg/person and 118376 mg/hr, in other comparison about the activity in the restaurant which total PAHs emission factor is largest concentrations in the catering restaurant that each source of PAHs are from oil usage and one meal per person are approximate 6275 mg/L and 429 mg/person respectively, followed by the cooking restaurant that each source of PAHs are from oil usage and one meal per person are approximate 3478 mg/L and 213 mg/person respectively and the lowest concentrations is in vendor street restaurant that each source of PAHs are from oil usage and one meal per person are approximate 142 mg/L and 93 mg/person respectively.
About the PM10 and PM2.5 in 16 different restaurants, separated to three kind of sampling, about the PM10 and PM2.5 samplers in the combination processing equipment, only the processing equipment and non-samplers. The comparison of PM10/TSP and PM2.5/TSP ratio; the both concentration ratio are high which relative relationship. The proportion of non-oil droplets is lower cause the smaller particle size, the compositions of the particulate droplets lowers that mean the granular compositions which keep on the large droplets. |
