    標題: 台灣與中國菊花抗氧化活性成分比較之研究

    摘要: 菊花為屬菊科植物菊 (Chrysanthemum morifolium Ramat),依其
    花色可分為黃、白兩種菊花,自古即為我國常用中藥,具有治療頭痛、
    清肝明目等作用。現代研究證實菊花具有降低膽固醇、抗發炎、抗氧
    化等作用,台灣市場品有本土栽培及中國之黃、白菊。本研究目的取
    材於台灣自產之黃、白菊及中國之黃、白菊,進行水萃取,可得台灣
    黃菊水萃取物 (TY),台灣白菊水萃取物 (TW),中國黃菊水萃取物
    (CY),中國白菊水萃取物 (CW)。將所得萃取物進行清除 DPPH 自
    由基及 Trolox 當量抗氧化能力及總酚含量測定試驗,比較兩個產地
    之菊花抗氧化功效差異。結果顯示 TY 之清除 DPPH 自由基能力及
    Trolox 當量抗氧化能力為最佳。總酚含量測定結果顯示,CY 之含量
    為最高,TY 次之。
    為進一步瞭解四種菊花中之抗氧化物成份含量, 選擇
    chlorogenic acid 、rutin 、luteolin 、kaempferol 、quercetin 及
    kaempferol-3-O-β-D-glucoside 等六種指標成份標準品進行 HPLC 含
    量分析,結果顯示 chlorogenic acid、rutin 成份以 CY 含量最高分別
    為3.36 及7.63 mg/g; kaempferol-3-O-β-D-glucoside 成份以CW 最
    高為4.22 mg/g 而 luteolin 成分僅在 CW 中檢測出為3.01 mg/g。
    quercetin 及 kaempferol 成份,在四種菊花水萃取物中並無檢測出。
    Chrysanthemum morifolium Ramat (Chrysanthemum) belongs to the
    Asteraceae family. According to the color of their flowers, there are two
    kinds of chrysanthemum, including white and yellow chrysanthemum.
    Chrysanthemum has been used to treat headaches and clear the liver and
    eyes. Modern studies had proved that chrysanthemum have reducing
    cholesterol, anti-inflammation and anti-oxidantive activities. There are
    four chrysanthemum in Taiwan market, including white and yellow of
    native cultivation and Chinese chrysanthemum that were collected and
    extracted with H2O. Four water extracts namely, Taiwan yellow (TY),
    Taiwan white (TW), Chinese yellow (CY), Chinese white (CW)
    chrysanthemum water extracts were respectively obtained. The purpose
    of this study was to compare the difference of antioxdant activities and
    constituents between four water extracts by DPPH radical scavenging
    ability, Trolox equivalent antioxidant capacity, and total phenol contents.
    The results revealed that TY had the most effective DPPH radical
    scavenging ability and Trolox equivalent antioxidant capacity. CY had the
    most amount of total phenol contents and TY was secondary.
    Further to understand the constituents of four water extracts, we chose
    six marker components, including chlorogenic acid, rutin, luteolin,

    kaempferol, quercetin and kaempferol-3-O-β-D-glucoside, were
    quantitative analysis by HPLC for them. The results revealed the largest
    amount of chlorogenic acid and rutin were in CW, 3.36 and 7.63 mg/g
    respectively, the largest amount of kaempferol-3-O-β-D-glucoside (4.22
    mg/g) was in CW and luteolin just found in CW (3.01 mg/g). Quercetin,
    kaempferol were not found in four chrysanthemum water extracts.
