    標題: 由膳食調查評估嘉南藥專學生營養狀態與營養常識認知程度
    A dietary survey for students of chia-nan junior college of phamacy

    摘要: 為了解嘉南藥專學生營養狀態與營養常識認知程度,于民國七十五年五月份著手進行膳食調查,包括以實物稱重法並二十四小時膳食回憶記錄法求得受試同學計一三○名二星期中每日食物攝入量,加以換算營養成分後與建議量比較。另以直接問卷調查本校各科各年級五八八名學生營養知識認知程度與一般飲食型態。結果得知: 1.本校住宿同學醣類攝取不足致熱量男生為2470大卡,女生為1660大卡皆比建議量少。2.礦物質以鈣鐵不足而磷卻過高,平均男生每日鈣650毫克,磷1035.5毫克,鐵13.35毫克,女生每日鈣354.5毫克,磷732.5毫克、鐵13.26毫克均不符合建議量。3.維生素攝取為男同學維生素B2 1.02毫克與菸鹼酸14.54毫克比建議量少。4.營養知識認知與態度普遍呈正向情形,四科中以藥學科與食品科同學表現優於其他兩科。5.飲食行為普遍有忽略早餐,少食蔬果、牛奶等情形顯示在食物選擇與型態上有缺失。
    One hundred and thirty students of Chia-Nan Junior college of pharmacy were randonmly selected as the subjects for daily dietary survey by both food inventory and 24-hours-recall methods for a period of 2 weeks. The average daily nutrients intakes were calculated and compared with the Taiwan food balance sheet. Another 588 studends of the same school were selected according to their major and grade, for the assessment of their generai nutritional knowledge and food habits by direct questionnaire method. The results results revealed that :
    (I)Energy intake was 2470 Kcal and 1660 Kcal for male and female subjects subjects respectivaly, which was lower than RDA of ROC government.
    (2)Protein (M:94.02g,F : 87.61g) and Lipid (M: 76.05g, F : 69.50g ) intakes were higber than RDA values, but intake was not enough for Carbohydrate.
    (3)Calcium intake was 650mg and 354.5mg for male and femal subjects rspectively, which was much lower than RDA values. On the other hand, the level of Phosphorus intake (M:1035.5mg, F:732.3mg) was too high, it might further decrease the caium availability.
    (4)lron intake was 13.05mg and 13.26mg for male and female subjects respectively, which was slightly lower than RDA values.
    (5)The average daily intakes of vitamin A (M: 6998.53 I.U. ,F : 6615.14 I.U. ),B1 (M: 1.22mg,F:0.93mg) and C (M:68.91mg,F:66.74mg) for both male and female,vitamin B2 and Niacin for female ( 1.31mg and 15.02mg respectively )were higher than RDA values. On the other hand, intakes of vitamin B2 and Niacin for males (1.02mg and 14.54mg respectively ) were deficient in quantity.
    (6)The date obtained from general nutritional knowledge survey shown that most students were in the positive direction. Unfortunately, it was found that breakfast was neglected by most students, and most of them did not take enough vegetables, fruits and milk, indicated that the food habits of them was not very good.
