    Abstract: 目前臺灣評估蔬果攝取量,一般均使用傳統的飲食評估方法(例如:24小時飲食回憶法、飲食紀錄法等),國外則已有蔬果評估簡速量表之研製施行,但因東西方飲食習慣之差異並不適宜沿用。為此,本研究發展國人的蔬果評估簡速量表,盼作為有效的飲食評估工具。本研究分成四個階段:第一階段以質性研究法調查國人蔬菜、水果及蔬果汁攝取情形,第二階段進行蔬果評估簡速量表之研發,第三階段以蔬果評估簡速量表進行前驅研究,第四階段以量性研究施測蔬果評估簡速量表及其效度分析。全數樣本係以方便取樣法取得,在信度研究方面,共有40名受試者以間隔一週重複填答量表測量其重測信度;在效度研究方面,共有200名受試者參與,收集其三次24小時飲食回憶記錄。結果顯示:在信度研究中,量表整體之重測信度為0.57。在效度研究中,發現蔬果總攝取之相關係數為0.43,範圍由0.10-0.49;敏感性方面,範圍由48%-98%;專一性方面,範圍由4%-86%;交叉分類方面,平均85.4%受試者的蔬果總攝取在三等分後分到相同或鄰近的等分位。蔬果評估簡速量表之信、效度檢測結果皆在可接受範圍,希冀日後能應用在國人自我檢測或是營養從業人員評量蔬果攝取之有效營養評估工具。
    Dietary assessment methods of fruit and vegetable(F&V)intake commonly used in Taiwan include such as 24-hour dietary recall and dietary record. Although Fruit and Vegetable Screeners, easier and cost-effective, have developed and applied in other countries, the differences between the Eastern and Western diet habits should be put into consideration. This study intended to develop a Fruit and Vegetable Screener suitable for Taiwanese to be an effective dietary assessment tool. The study consisted of four stages. In the first phrase, a qualitative research method was used to survey vegetables, fruit, F&V juice intake. A fruit and vegetable screener was developed on the second stage of the study. During stage three, a pilot study with the developed F&V screener had been undergone. Finally, based on quantitative research method, the developed F&V screener was used to evaluate its effectiveness and validity. Samples were chosen by convenience sampling. Forty participants were recruited and were requested to fill out the developed F&V screener repeatedly with an interval of one week to measure the test-retest reliability. For the test of validity, three times of 24-hour dietary were collected among a total of 200 participants. The results found that the reliability for the screener was 0.57. For the validity, it showed that the correlation coefficient was 0.43, ranging from 0.10 to 0.49; the sensitivity ranged from 48-98%; the specificity ranged from 4% to 86%; and in the study of cross-classification, 85.4% of participants were placed in the same or adjacent tertile in terms of their F&V intake. In summary,the developed F&V screener were within the acceptable ranges both in its reliability and validity. For its application, it would be an effective assessment tool for F&V intake whether doing self-assessment by people or conducting related studies by the nutrition professionals.
