摘要: | 本研究探討小球藻和植物(如蘆薈、石蓮花等)醱酵的有無,評估其醱酵液在功效上的差異。在小球藻和植物連同培養基中分別加入兩種不同的菌種,測試其醱酵産物在抗菌、抗氧化、抗老化方面的能力。實驗是利用標準菌株枯草桿菌(Bacillus subtilis,BS)先將小球藻和植物內容物分解成小片段,再以酵母菌(Saccharomyces cerevisiae,SC)再次醱酵,用以得到醱酵後的生成物。生成物經過乙醇萃取後之萃取液對抗菌、抑制基質金屬蛋白酶(MMPs)的活性和清除DPPH ( 2,2-diphenyl-1-picrylhydrazyl,為一種穩定的自由基) 能力做測定。實驗結果在抑菌方面沒有明顯效果。在抑制MMPs方面,未醱酵與醱酵之四個小球藻樣品呈現明顯的抑制MMPs能力;洋吊鐘的四個樣品也都有明顯抑制MMPs能力,其中以未醱酵樣品最佳;石蓮花未醱酵與經SC醱酵的樣品對抑制MMPs有明顯的效果;仙人掌對MMPs抑制能力最佳的是未醱酵樣品;蘆薈四個樣品的抑制效果都很明顯;明日葉只有未醱酵樣品較具抑制MMPs能力。清除DPPH方面則每個樣品都有良好的效果,小球藻未醱酵樣品在濃度0.83mg/ml時約有95%清除率;洋吊鐘未醱酵樣品在濃度4 mg/ml時約有95%清除率;石蓮花未醱酵樣品在濃度4 mg/ml時約有95%清除率;仙人掌未醱酵樣品在濃度4 mg/ml時約有90%清除率;蘆薈未醱酵樣品在濃度4 mg/ml時約有90%清除率;明日葉未醱酵與醱酵的四個樣品在濃度8 mg/ml時都有90%以上的清除率。 In this study,fermentation of the Chlorella and the plants by adding two kind of bacteria in culture medium and analyzed the functional effects of fermentative metabolites.These tests included the antibacterial, antioxidative and anti-aging effects. This experiment used the Bacillus subtilis to break the contents of Chlorella and the plants into small fragments then to ferment these samples by Saccharomyces cerevisiae. The resultants were extracted with ethanol and they were detected the abilities of antibacteria, inhibiting the activity of MMPs and scavenging DPPH free radical. No significant effects of the antibacteria were found in these different extracts. In the Inhibition of MMPs, including nonfermentative and fermentative treatment of Chlorella samples showed significant abilities in inhibition of MMPs. The four samples of Chandelier plant also had obvious ability to inhibit MMPs, but nonfermentative sample had the best effect. Both the non-treated sample and the sample fermented by the SC had significant inhibition of MMP in Houseleek plant. The best sample of MMP’s activity inhibition was nonfermentative sample in Cactus plant. The inhibitory effect of MMPs activity in Aloe samples are obviously. Only nonfermentative sample could inhibit MMPs activity in Angelicakeiskei plant.On the DPPH free radical scavenging rate, the concentrations of nonfermentative samples were in 0.83,4,4,4,4mg/mL about 95,95,95,90,90% eliminating rate in Chlorella, Chandelier, Houseleek, Cactus and Aloe plants, respectively. The concentration was in 8mg/mL, nonfermentative and fermentative sample of the Angelicakeiskei plants had about 90% DPPH scavenging rate. |
