    Title: 校園餐廳餐飲排放油煙多環芳香烴化合物之特徵

    Abstract: 本研究以台灣南部地區台南縣市轄區內五家學校中央廚房及為研究對象,收集來自餐廳煙道廢氣及通過污染防制設備廢氣中PAHs之樣品。煙道廢氣PAHs以一套煙道PAHs 採集系統為之,以玻璃套筒(Cartridge)收集廚房廢氣中的多環芳香烴化合物,以氣相層析質譜儀(Gas Chromatography / Mass Spectrometer , GC / MS)進行分析,以定性與定量21 種多環芳香烴化合物之濃度。
    研究結果顯示,所有校園餐廳廚房煙道廢氣中之PAHs以氣相為主,以質量分布而言氣相所佔總PAHs 百分比為80.5%。五間餐廳廚房煙道廢氣中之Total-PAHs、ΣHM-PAHs、BbF + BaP + DBA濃度及Total-BaPeq濃度平均值為117.5μg/ m3、22.9μg/ m315.5μg/ m3及5.80μg/ m3。五家校園廚房排放系數來看最高為為A2餐廳其排放系數為225 mg / L-油及23.6 mg/人.餐,最低為B1餐廳其排放系數為583.5mg/L-油及8.74/人.餐。就排放系數比較,校園內中式餐廳排放系數較西式餐廳高;裝設有水洗機防治設備之校園餐廳,其排放係數較無裝設防制設備之校園餐廳低,顯示校園內餐廳裝設廢氣清除處理設備有其必要性。
