    Abstract: 台灣家庭在外伙食費佔家庭食品費的比率較10年前提高14.2%,並且有著持續成長的趨勢,而國人對外食的營養意識概念似乎也慢慢抬頭,本研究首先將暸解國內目前的外食人口對健康營養餐廳的需求,進而以此一結果來研究其與消費者飲食行爲間的關係。本研究之目的是暸解台灣地區消費者對餐飲業提供健康營養菜單及菜單說明呈現的需求;研究消費者飲食行爲與對健康主題餐廳需求間的關係。本研究以敘述性統計分析、因素分析、t檢定、變異數分析及典型相關分析華進行資料分析,研究結果及建議希望能提供政府考慮建立台灣地區餐飲服務業之菜單標示規範的參考,提升國內餐廳菜單設計者的專業素質,以滿足國內日益增加的營養需求的外食族群人口。此外,希望亦能提供國內餐飲管理類似學術研究的參考。
    The demand put on Taiwan's market of dining out has dramatically increased 14.2% more than ten year before. It seems consumers became more health conscious. The purpose of this study was to explore the consumers' demands of health-preservation restaurants when they eat away from home. Base on the results, it also examined the relationship between consumer behavior and the demands of health-preservation restaurants. This survey study analyzed the data by using the descriptive analysis, factor analysis, t-test, ANOVA, and canonical analysis. The managerial implications of the findings for the foodservice industry and researchers are discussed as well.
