    Abstract: 本研究的目的旨在比較以不同比例的有機與化學肥料培育的甕菜之一般成分及品質,並嘗試以近紅外線光譜技術分析蔬菜之成分。結果顯示甕菜之一般成分中,水份、灰分、粗纖維、甲醛態氮於不同比例的有機與化學肥料培育者無明顯差異。而有機肥料使用量越高,甕菜之β-胡蘿蔔素、維生素C、硝酸態氮、蔗糖、果糖和葡萄糖等含量也較高,但統計上並無顯著差異。此外,有機肥料之甕菜採收後之呼吸速率明顯高於化學肥料培育者。以近紅外線光譜技術分析甕菜之水分、灰分、粗纖維、β-胡蘿蔔素及總糖,檢量線方程式的R2均大於0.94,SEC均小於0.39 可信度測試結果r均大於0.93,SEV均小於0.37。此結果可應用於甕菜一般成分的快速分析。
