摘要: | 本篇論文在探討液晶微膠囊之研製,以液晶為蕊材,阿拉伯膠和明膠為壁材以及食品用之固化劑,來製備液晶微膠囊,並進行最優化條件的研究。
首先選用能在室溫產生顏色變化的液晶為蕊材,然後以阿拉伯膠和明膠為壁材,予以微膠囊化,再以固化劑固化。探討壁材濃度、蕊壁比、溫度、乳化時間、攪拌速度、pH值、稀釋水量、固化劑用量、固化時間等條件,對產率、粒徑大小和微膠囊化的影響。結果顯示:阿拉伯膠和明膠重量百分比濃度各1%、蕊壁質量比(阿拉伯膠:明膠:液晶)1:1:1、溫度60℃、乳化時間5分鐘、轉速500rpm、 pH值4.0、凝聚30分鐘、稀釋水量1倍、固化劑3mL、固化時間1小時的條件下,能得到71.23%的產率、平均粒徑9.64μm、囊壁平滑且顯色良好的液晶微膠囊。
關鍵字:液晶、微膠囊、微膠囊化產率 The microencapsulation of liquid crystals is the goal of this study. We chose the liquid crystals as a core material, acacia and gelatin as shell materials, and food curing agent. The complex coacervation method under optimal conditions is used to process microencapsule. Liquid crystals, which change color at room temperature variations, are used as the core. There are several encapsulating parameters including the concertration of the shell, the ratio of the core and shell, temperature, emulsification time, stirring speed, pH value, curing time, volume of and distilled water curing agent. These encapsulating parameters are influenced by microencapsulation yield, mean particle diameter and microencapsulation.
The result shows that the optimal conditions to process quality appearance of microencapsules such as smooth shell and changing color and to produce mean particle diameter of 9.64μm and microencapsulation yield of 71.23% are the following: the concentration of acacia and gelatin is 1 % each, the proportion of the shell and core is 1:1:1, temperature is 60℃, the emulsification time is 5 minutes, stirring speed is 500rpm, pH value is 4.0, dilution by 100mL with distilled water, curing agent is 3mL and curing time is 1 hour.
