    Abstract: 本研究之目的即以台南地區盛產且具抗氧化性之蔬果壓榨,接種乳酸菌發酵,於發酵後再與果汁混合調製,藉由功能性分析與抗氧化分析,另配合新產品開發,擬與烘焙食品搭配,製作不同的糕點,作為本院及本系之特色保健產品,開發之產品藉由營養成分標示,確立乳酸保健烘焙食品之製程,才能真正提供消費者具保健功效與美味之產品。
