    Title: 台南地區食品中添加物之現況調查
    An Inspection of the Additives in Foods from the Area of Tainan

    Abstract: 為瞭解台南地區食品添加物之現況,乃由不同市場、商店及攤販採購食品多類,加以分析調查其中可能含有之色素、硼砂及人工甘味料。由實驗結果發現:
    (1)糖果類、醬菜類、果醬類及其他等四類的含色素件數百分比高達百分之五十以上;其他如飲料類、蜜餞類則佔百分之五十以下;有少數檢品使用非法定色素。
    (2)二十九種檢品中含硼砂者有十四種,比例當高,值得注意。
    (3)含人工甘味料件數百分比,飲料類為百分之三十五,蜜餞類為百分之六十二,罐頭類為百分之十八。
    For understanding the situation of additives being used in foods in the area of Tainan, many kinds of foods were sampled from different markets, merchants and stalls. The additives such as synthetic dyes, borax and synthetic sweetners which might be involved in the samples were analyzed. From the data obtained, we found that
    (1) The percentages of the number of candies, pickled vegetables, jams and others etc. which containing synthetic dyes are higher than fifty percents. Otherwise, samples such as beverages, sugared foods contain less synthetic dyes. Illegal synthetic dyes were found in some of the foods tested.
    (2) It is worth to note that fourteen in twenty-nine samples tested contain borax.
    (3) The percentages of the number of samples which containing synthetic sweetners in beverages, sugared foods and canned foods are 35%, 62% and 18% respectively.
