    Abstract: 一種纖維狀凍豆腐之製造技術,係以脫完渣之豆漿,加入一由人造肉經泡水、脫水及拆絲處理之組織化大豆蛋白,並攪拌與加熱處理,再加入水溶解之熟石膏凝固,經壓置與凍結處理,待解凍後,產生一不僅具咀嚼性、吸汁性、耐煮性外,更具有延展性、纖維性與韌性及可為全素素食肉用之纖維狀凍豆腐者;其中,有關組織化大豆蛋白之添加時機與豆漿加熱方式,亦可為豆漿預先加熱再加入組織化大豆蛋白,激烈攪拌後加入熟石膏凝固,經壓置與凍結,以配合目前機械化之豆腐工廠生產模式。
