    Title: 乳酸菌抑菌功能之評估及發酵生產

    Abstract: 本研究針對自行分離之乳酸菌(Lactic acid bacteria)探討抑制蛀牙菌的可能性。自行分離之224株乳酸菌株以API 50 CHL套組進行菌種鑑定,發現所分離之菌株皆為乳酸菌。研究結果初步發現224株乳酸菌株對造成齲齒的Streptococcus mutans及Streptococcus sobrinus菌株具有不同程度抑制效果。為了排除其他因素造成之抑制,本研究進行乳酸、H2O2的排除試驗,分別篩選出抑制S. mutans及S. sobrinus活性較高之菌株各1 株。本研究以不同糖質進行乳酸菌株之培養與細菌素活性探討。此外,將糖質培養基中具良好抑菌活性之乳酸菌菌株進行16S rDNA gene序列分析。
